Ingredients:
For the Fried Fish:
2 pounds of your favorite white fish fillets
1 1/2 cups Club Cracker crumbs
1 cup all-purpose flour
3 eggs, beaten
2 tsp water
1/2 cup dill relish
1 tbsp + 1/2 tsp Tee's Apples To Oranges Citrus Chicken Blend
2 tsp Tee's Smoke Blend
1 1/2 tsp sugar
1/2 tsp fresh lemon juice
Lemon wedges, for serving
For the Tarter Sauce:
1 cup mayonnaise
1/2 cup dill relish
1/2 tsp Tee's Smoke Blend
1/2 tsp Tee's Apples To Oranges Citrus Chicken Blend
1/2 tsp fresh lemon juice
1 1/2 tsp sugar
Instructions:
Prepare the Fish:
Season the Flour: In a shallow dish, combine the flour with 1 tsp of Tee's Apples To Oranges Blend and 1/2 tsp of Tee's Smoke Blend. This will be your dredge.
Season the Crumbs: In another shallow dish, season the Club Cracker crumbs with the same amounts of Tee's Apples To Oranges Blend and Tee's Smoke Blend as the flour.
Prepare the Egg Wash: In a third dish, mix the beaten eggs with 2 tsp of water.
Coat the Fish: Dredge each fish fillet in the seasoned flour, shaking off any excess. Dip it into the egg wash, then coat it with the seasoned cracker crumbs, pressing gently to ensure a thorough coating.
Fry the Fish:
Heat the Oil: Preheat your oil to 330°F. If you're deep-frying, make sure not to overcrowd the pan to maintain the oil temperature. If pan-frying, work in batches.
Fry the Fish: Add the coated fish fillets to the hot oil and cook until golden brown, about 2-3 minutes per side. If pan-frying, flip the fillets carefully when they are golden on the first side and fry until the second side is also golden.
Drain: Place the fried fish on paper towels to drain excess oil.
Make the Tarter Sauce:
Mix Ingredients: In a bowl, combine the mayonnaise, dill relish, Tee's Smoke Blend, Tee's Apples To Oranges Blend, lemon juice, and sugar. Stir until well mixed.
Serve:
Plate the Fish: Serve the crispy fried fish hot with lemon wedges and a generous dollop of the tangy tarter sauce.
